VEGETABLE BROTH

Today we will see an easy recipe that will give you an healthy and flavourful base to make many vegetarian dishes. Let’s see the ingredients and all the tips to prepare your perfect basic vegetable broth.

Ingredients: 

1 litre of cold water

1 carrot 

1 stalk of celery

1 small onion or half an onion if you have a big one

6 cherry tomatoes or one big tomato 

a couple of bunches of parsley (do not use if you are pregnant)

1 teaspoon of salt

Fill a pot with cold water

clean the vegetables and chop them into large chunks

bring to a boil and cover

after reaching the boil, reduce to a gentle simmer and keep simmering for 45 minutes 

turn off the heat, add one teaspoon of sea salt and let flavour for 5 minutes

strain through a sieve and with the help of a ladle, press the vegetables to drain the water out

Store into jars with lid. Your vegetable broth will keep for 4 to 5 days in the refrigerator, or for 6 months in the freezer.
